Oxtail Stew

I decided to make my first oxtail stew, and I got to tell you it turned out very good. Sometimes we like to complicate things when we cook, by having a bazillion spices and 30 different herbs, OK so maybe not that complicated but nevertheless complicated. This time I chose to be simple and sometimes simple is good I found out, this stew is easy to make and you don't have to go and spend a hundred dollars on spices.


2lb of oxtail.
1 large onion (cubed)
1 carrot (sliced)
1 cup of read wine
Salt & Pepper to taste.
5 Cloves of garlic (crushed)
5 Potatoes.
6 Tomatoes (crushed)
Olive Oil.

Season the meat with salt and pepper according to your taste. Preheat the oil on high heat in a Dutch Oven, add the oxtail and brown the meat on each side for about 2 minutes per side. After browning the meat take it out and add the onion, garlic and the crushed tomatoes, add the meat and the red wine. You can also add some water just enough so it would cover the meat. Bring it to a simmer and cook for 2 hours.

After 2 hours add the carrots and the potato and cook for another 45minutes to an hour. Serve on a plate and enjoy on cool afternoons that are coming our way. I hope you enjoy this and this simple recipe can also be made with regular beef stew meat just adjust the cook time.
