Fish Soup Uha (Уха)

Last night I picked up some great wild sockeye salmon at a local store and had them fillet it, as always I took all the bones, the tail and all the cut off pieces with me. Today I was wandering what I could do with all off the bones so I decided to make soup out of them called Uha. Uha is a traditional Russian fish soup that is light and easy to make, some people use the whole fish including the head to make it, and it can be made from any kind of fish. Having the salmon bones and the cut off pieces I made a small pot probably enough for 2-3 adults, if you use the whole fish you can make more I just rather grill my salmon fillets and by making soup with the rest I did not waste any of my great salmon. Simple, tasty and healthy soup that is good for you.

Ingredients:

Whole or pieces of fish.
1 large whole onion.
6 pepper corns.
2 small carrots.
Some parsley.
Salt.
Watter.

Wash the fish and add enough water to cover the fish twice (you should have plenty of liquids so when you add the onion and carrots all would be submerged in water). Add salt and bring it to a boil, now add the rest of the ingredients and let it cook at low heat for about 45 minutes. You can also add potato to make it more hardy. Enjoy.
