Ingredients for corn tortillas.
2 cups Maseca masa flour.
1 1/4 cups Water.
1/4 tsp sea salt.
Ingredients for taco.
1 flank steak.
1/2 sweet onion cubed.
1 bunch of Cilantro chopped.
2 teaspoons of sea salt.
1 bunch or radish
Start of by mixing the flour, water and salt together using your hands for about 5 minutes then divide the dough in to 16 equal portions and create small golf sized balls, cover with a cloth to prevent drying.
While the steak is cooking you can preheat a skillet with out any oil on medium high heat. Take your tortilla press and line both sides with plastic wrap, place the dough balls in the middle and press in to small tortillas, cook the tortillas on the preheated skittle about 30 seconds each side and set aside on a plate. I usually cover the plate of tortillas with a cloth, this prevents them from drying and keeps them warm.
Combine the cilantro and the onion in a separate plate and set aside, this will serve as topping on the steak tacos.
When your meat is ready take it off the grill and cut it up into small pieces, it's best if you use a wooden cutting board and a cleaver makes things much easier.
Take your tortillas place a small handful of cut up steak, top off with cilantro mix and add your favorite salsa on top, squeeze a bit of lime, serve with radish and enjoy the flavors of Mexico.
