Rye Flour Sourdough Starter

Many people want to make old style 100% Rye bread, and for that they are looking for rye flour starter, before we go on let me remind you that you can convert any starter in to all rye starter simply by feeding it rye flour for few times. But for all those who want to try and make 100% rye flour sourdough starter here is one way to start one.

What you will need.

1-clean glass Jar

1-wood or plastic spoon

1-measuring cup/scale


Start: Start with 50 grams of rye organic flour and mix with 100 grams of non chlorinated water. Mix them in the glass jar but make sure that your glass jar is clean before you start the process. Cover your leaven and let it sit in a room with temperatures at about 70 to 75 for 48 hours. On your 2nd day you should see small bubbles forming, you will notice that the culture will become really soapy, at that time you should stir the culture down.

2nd phase
: After stirring down the culture add 50 gram of flour and 50 gram of water to the culture and let it sit for another 12 hours. After 12 hours you should see lots of little bubbles and the culture being foamy.

Now you should discard most of the culture leaving only about a table spoon and add 50 grams of flour and 50 grams of water and let it rest for about 8 to 12 hours. At this stage your culture should be able to double in about 8 to 12 hours after that.

This is basic starter culture that could easily be converted to other types of starters by slowly starting to substitute the rye flour slowly. Good luck with this and let me know how it comes out.
