After having some heavy meals my wife had sudden craving for cream of potato soup, so we decided to make one with our own recipe. This cream of potato soup is nice, refreshing and great on a cold winter night.
6 potatoes peeled and cubed.
1/3 onion cubed.
1 apple cored, peeled and cubed.
1 tablespoon of Parmesan cheese.
1 cup of heavy whip.
1 1/2 teaspoon of dried rosemary.
3 cups of chicken broth
Sour cream (for garnish)
Put the cubed potato and onion in a medium sized sauce pan add water to barely cover the potato.
Bring to boil and add 1 cup of chicken broth. Add 2 pinches of salt (to your flavor) and cook till potato is tender. When potato are tender smash them (don't use a mixer)add 2 cups of chicken broth and 1 cup of heavy whip. Add some black pepper according to your taste, bring it to a boil, add rosemary and apple. Turn the heat down to medium so it will simmer, cook with the lid slitely open for about 10 min.
Serve in a bowl garnished with a teaspoon of sour cream. Tastes best with dark rye or toasted white bread.
