4 Skinned, boned chicken breast.
1 Cup chopped apples.
2 Tablespoons Italian stile bread crumbs.
1/4 Cup shredded mozzarella cheese.
1 Teaspoon Parmesan cheese.
3 Table spoon raw sugar.
1/4 Teaspoon cinnamon.
2 Cloves of pressed garlic.
1/4 Teaspoon ground cumin (optional).
1/2 Teaspoon crushed basil leaves.
1/2 Teaspoon seasoning salt.
1/4 cup white dry wine.
1/4 cup chicken broth.
Dash of black pepper.
First prepare your stuffing. Take all your ingredients except wine, chicken broth, 2 table spoons of raw sugar, and 4 slices of apple, now mix all of them together in a dish. Thin out your chicken breast to about 1/4" in thickness and spread the stuffing on the chicken breast dividing between them. Wrap the chicken in to a roll, to hold it from unrolling put a toothpick through it. Preheat a large pan with olive oil and blacken your chicken rolls, this will add great look and flavor to your chicken rolls. After blackening the chicken add wine, and chicken broth in to the pan, bring it to a simmer and cover with a lid, bake it for about 10 to 15 minutes till the chicken is ready.
Now take out your rolls and set them aside, but leave the liquids in the pan and add the remaining sugar and the slices of apples, turn the up the heat and bring it to a boil, mix the liquids till the sugar starts to caramelize and thickens to a nice golden paste. All is left is to cut the chicken rolls and spread the glaze over it and enjoy.
I know that this has lots of ingredients and sound complicated but trust me it's not as scary as it sounds. I was a newbie wen I first tried this and succeeded so go ahead and make some apple stuffed chicken breast.
